牛魔皇帶來招積、超值、超靚牛扒

牛魔皇們必然首選美國菜嘅牛扒來作主食,並會尋找香港最好最靚嘅頂級貨來吃,佢哋還食得招積,研究菜牌上不同款式的牛扒,來自牛的那部份,幾成熟最合佢哋個人口味。今次就跟佢哋去發掘出眾嘅牛扒。

1.香烤美國安格斯西冷扒(9安士)

先嚟介紹西冷牛扒Sirloin Steak,係牛腰後端接近臀部,肉質柔軟度不錯。魔皇們推介野玩山店嘅「香烤美國安格斯西冷扒」9安士份量,一位大胃王就剛剛好。七成熟Medium Well就最好味,外層呈現稍褐色,中心部份則為粒紅色。一口咬下去鬆軟無比。

2.阿根廷肉眼扒

Ribeye肉眼扒,就係指牛肋中央部分去骨,有紅白相間脂肪,紋理像大理石般。近年興起食阿根廷牛扒,Tango內就品嚐到阿根廷的「肉眼扒」,叫五成熟Medium,外表全煎熟,內裡以粉色為主,中心部份帶絲絲紅色,能吃到鮮嫩滋味,還有6種醬料一同送上,Grained Mustard、Dijon Mustard、Criolla、Spicy Tomato、Chimichurri 及 Horseradish。咁樣食就完美食嗱!

"Probably one of the best steak house in HK. The steak is so flavourful, properly aged with herbs and cooked to perfect temperature. The ribeye is 14Oz and it is good for 2 servings. Six sources were given to accompany the steak and I love this idea to provide more different tastes. Steak tartare is delicious and it is a nice starter. Poached pear was served as dessert and the sweetness is just perfect to balance a very flavourful steak dinner. Overall, I like this restaurant. Servers were polite and friendly. They care how you like their food. Service is good and it is great value for money. I have no hesitation to come back to this restaurant for another meal. Thank you Tango!" 3.Fillet 菲力牛扒

菲力扒喺牛腹腔中間,牛腰脊最嫩滑嘅肉。摩皇們一至推介Craftsteak Open Fire Cooking 嘅「菲力牛扒」。發現肉質纖維較其他部份幼細,所以明顯肉質最為嫩口,脂肪成份非常少,燒至三成熟Medium-Rare最配合,中心呈紅色,並帶點溫暖,可說整隻牛最嫩最矜貴部份,一定要吃呢!

4.慢煮牛頰肉Slow-braised Beef Cheeks

食咗幾件牛扒以明火燒煮後,喺Assembly嚟個以慢煮的Slow-braised Beef Cheeks,佢哋以慢煮方式製牛頰肉,同時牛肉高湯及紅酒配成的炇汁,花上長時間一起炇燉,使肉質超級軟稔,唔嚡口,食落重有股香濃牛肉味,以及陣陣紅酒味。品質高,絶對可encore再食過!94
